Some people love it, some hate it, but don't knock it till you've tried it.
So what would you say, when someone offers you to try a new pizza with a cauliflower base? My first reaction might have been slightly different to yours...cause I was the guy asking!
I read about it on a Keto app and decided I was going to try this even if it tasted Sh**
I had no idea what I was doing, I just did it...
The attached image is the first cauliflower pizza I made for my family. To be honest it came out better than I expected. So let me run through the recipe before revealing the taste.
Heat oven to 200C/180C fan/gas 6,
Cut 1 cauliflower into chunks and add to a #foodprocessor until its finely chopped.
Tip the entire content to a bowl, cover with cling film and microwave for 5 minutes till soft.
Tip the cauliflower onto a tea towel and wait a few minutes, then scrunch up the tea towel and squeeze as much liquid as possible to get rid of any excess water and then transfer to a clean bowl.
Now stir in ground almonds, 1 egg, oregano, garlic powder, paprika and lots of seasoning.
Line your backing tray with baking paper and grease with oil spray.
Mound the cauliflower mix onto the centre of the tray and use your hands to spread it out medium thickness all the way round, but make sure the edges are a little thicker to give it that pizza crust.
Now bake the base for about 15 minutes before removing it out of the oven and adding your toppings.
Spread tomato paste all over the base before adding cheddar cheese, mozzarella and basil leaves. Now cook for a further 15 minutes before eating.
So now the verdict!!! It was DELICIOUS!!! The base totally tastes like real pizza dough and the toppings made it one of the most Keto friendly pizzas I have ever eaten.
